Like cheese fondue? As per the pseudo-recipe I posted right before Christmas, there are some good pointers and recipes in today's Times, "A Little Nostalgia, a Long Fork, and Lots of Cheese." I wouldn't want to eat fondue on a regular basis but it is oh-so-delicious on a cold night. The recipes in today's paper include the use of veggies and on for Queso Fundido with chorizo, jalapeno, and cilantro, the concoction to be scooped up with tortillas (corn or flour, depending on your gluten tolerance).
